So last night I knew I would be busy later so I put together something quick and simple. Stuffed bell peppers are easier than you might expect to make and they are quite tasty! My husband enjoys these and even finished mine last night.
Ingredients (for 2 stuffed peppers):
- 3 Bell peppers (color doesn't matter) -
- Salt to taste
- Sausage or sausage substitute (I used LightLife Gimme Lean beef substitute)
- Optional: If you use the substitute, I suggest adding garlic powder and red pepper flakes to give it a sausage taste. If you just use sausage, you can skip this.
- 1 Medium Onion, Chopped
- 11/2 cup of shredded cheddar cheese
Step One: Preheat oven to 350. Chop your onion and one of the bell peppers. Saute in pan with small amount of oil. Add red pepper flakes, and garlic powder if necessary. Also add salt.
I chopped this onion, and I'll have you know I only had to stop to cry about one and a half times.
Step Two: While your peppers and onions are simmering, use a saturated knife to even the bottom of your two peppers, being careful not to cut so deep that you leave holes where your stuffing will seep through when baking.
Step Three: Grease small baking pan, and set peppers inside. Place some cheese in the bottom. This will help avoid seeping as well.
Step Four: Once onions have browned slightly, add you sausage or sausage substitute.
Step Five: When your meat has cooked, start to carefully spoon the mixture into your pepper. My husband prefers multiple layers of meat and cheese, but in my pepper I usually do one layer of cheese on the bottom, and one on top, only. Prepare based on your preferences of meat to cheese ratio. Press down gently on your mixture as you put it in the pepper to make more room. When they bake, the pepper will expand so don't worry about it spilling out as it cooks.
Step Six: Add a final layer of cheese on top, and place pan in the oven. Bake for 15 minutes or until cheese has started to brown. Enjoy!
These are really simple and delicious. As I said before, my husband ate his and about half of mine!
