Things I learned while making this dinner:
- Producers of imitation Italian sausage have a looong way to go
- "Bread and Butter" pickles are nasty and not the same as Hamburger Dills
- Fake bacon (Facon) tastes like bacon, but looks like dog treats.
This dinner had its ups and downs. I'd say all around, the dinner was a success, but I probably will never make it as a "dinner" again. Each bite left me thinking "This is great, but there is too much of it on my plate to handle," which leads me to believe that both of these things are better left as appetizers rather than a dinner.
So the next time you see me make these, it will probably be for a superbowl party or the like. But go ahead and give them a try! Definitely delicious!
Let's break this down, shall we?
Atomic Peppers
Here's what you'll need:
- 1 can Jalapeno Peppers, whole
- 1 cup monterrey jack cheese, shredded
- 1 cup cheddar cheese, shredded
- 8oz (1 box) cream cheese, room temperature
- mini sausages or cut up whole sausages, or imitation
- Bacon (or facon)
- 1 tablespoon chipotle chili powder

Step one: Preheat oven to 350. Use a knife to slice your jalapenos in half, then use the knife to gut the seeds and membrane. The seeds are what makes it so spicy, so if you can tolerate spicy really well, you can leave some seeds. I took nearly all of ours out and it was still quite spicy.
Step two: In a mixing bowl, mix all of your cheese and the chili powder together. Spoon it into peppers.
Step three: If you aren't using mini sausages, go ahead and cut your regular sausages into pieces that will fit your peppers. I used a mixture of cheddar brats for my husband and imitation Italian sausage. I also left some peppers without meat in the middle. Once your sausages are cut, place them in the peppers on top of the cheese.
Step four: If you are using regular bacon, cut your strips in half. If you are using fake bacon, one whole strip is probably the length you want to keep. Wrap your bacon around your peppers. If they are having trouble staying, use a toothpick to hold it together. Place them in a baking pan and cover it with foil. Bake for 30 minutes covered.
Yes, I'm fully aware that facon looks like Beggin' Strips (dog treats). It tastes legit, however!
Step five: Remove foil. Bake for an additional 10 minutes to allow bacon to crisp. Serve and enjoy!
These were a hit for my husband. He really liked them, but agreed with me that they are better served an appetizer, since after 3-5 pieces he was done.
The imitation Italian sausage was not good. I would not recommend it in the slightest. I ended up eating the plain peppers with just cheese and facon, and they were delicious. My husband enjoyed his cheddar brat peppers!

Fried Pickles
Ingredients:
- 1 jar of Hamburger Dill sliced pickles, drained
- 1 cup flour
- 2 cups of Panko Bread Crumbs
- 2 eggs
- 3/4 cup light-medium beer
Step one: Mix your flour, eggs, and beer in a mixing bowl until smooth. Drop your drained pickles into the mixture and gently mix.
Step two: Carefully pull out the pickles one by one and cover in panko crumbs. Place in oil in medium pan for frying.
Step three: Once lightly browned, flip over. Once done to desired consistency, put on plate with paper towels to dry.
Step four: Serve with ranch or thousand island dressing/dip. Enjoy!
I had to improvise on this recipe. The only thing my pin linked to was a picture. I had to go with what was in the description. When I originally fried the pickles, (the recipe did not include panko crumbs), the breading was not right. It was more like bread and less like fried pickles. I tried the panko crumbs on a hunch and it was instantly better.
Ah, these would have been perfect had I not accidentally bought bread and butter pickles! Ew, yuck!
Well, now I know! We both love fried pickles so I'm so glad to know the recipe, and it's so easy!
