Cool Ranch Taco Salad

Okay, so everyone knows how to make taco salad, but we have a funny way of doing things around these parts and I thought I'd share.

This is my husband's #1 favorite dinner. Just above Portillo's, Cheddars, and Abuelo's, I'm sure.

There's not much work in this one, but here's what you'll need:


  • One bag of Cool Ranch Doritos
  • 1lb of ground beef or the vegetarian substitution (I used MorningStar Crumbles)
  • Taco Seasoning*
  • Lettuce
  • Shredded Cheddar
  • 1 Tomato
  • Sour Cream
  • Salsa
  • Optional: Bell Peppers (chopped), Onion (chopped)
*Note - you can use packaged taco seasoning, or a fajita spice. I have both, but I used the spice. The difference in taste is barely noticeable. 

Step One: Grease a large pan and let it heat up. Add your onions, bell peppers, and ground beef. You really only need the ground beef. I choose to add bell peppers because it "beefs" up the meaty portion and makes more servings. It also makes it colorful. 

Step Two: While your beef is heating up, prepare your serving station. I typically make a line of items that I know my husband will put on his plate, and let him prepare it to his liking. Cut up your tomato, lettuce if you have a head of lettuce, open your sour cream, salsa, etc. The meal cooks quickly so I like to have all this ready so it can be served hot. 


Step Three: Take selfies while you wait for your husband to leave work so you know when to start dinner so it will be hot when he get's home. Okay, this step is optional ;)


Step Three (really this time): After your meat and peppers have browned, remove from heat and start preparing your plate! I know Cool Ranch Doritos sound strange for taco salad, I thought so to when my husband suggested it, but it's really quite delicious! Give it a try! I have a suspicion that if you like Taco Bell's Doritos Locos Tacos, you will like this as well! 

(Also, my husband prefers this meal out of an old butter bowl. Don't ask me why, I have no godly idea.)

Step Four: Add the meat and your favorite toppings and enjoy! 


It's really simple, and sooooo delicious. My husband really enjoys this meal, so I try to make it once every two weeks or so, or until we get sick of it. If you are having reservations about the Doritos, try it with the regular nacho version first and see what you think (But I promise, this is better)!
