Chimichangas

This was a first for us, but exciting because we had our first dinner guest! We invited a friend over for what might be a new tradition, "Sunday" dinner. Sunday in quotes because it wasn't Sunday, of course.  We watched The Bachelorette, sipped on wine, and played with the pup. It was a great night.

Anyway, the chimichangas were delicious, and we all enjoyed them. It was our friend's first experience of fake meat and I think she was pleasantly surprised by the taste and texture of it. Or it could have been the wine talking ;)

So here's what you'll need:


  • 8oz box of cream cheese, room temperature
  • 8oz shredded pepperjack cheese
  • Flour Tortillas
  • 1 package of taco seasoning
  • 1lb of ground beef, shredded chicken, or meat substitute (choose whatever you feel like having, obviously)
  • Sour cream
  • 4-6 scallions
  • Salsa
  • Optional: I didn't try this, but after having this meal, I feel like a chopped bell pepper would have been great in these. 

Step One: Preheat oven to 350. In a greased pan, heat your meat or meat substitute and scallions (I saved some for garnish) over medium heat until lightly browned. If you choose to add the bell pepper (I suggest it), also heat it up now. I added some fajita seasoning to the mix (not a lot), but it's really unnecessary as the taco seasoning adds plenty of flavor. 


Step Two: As your meat is heating, find a medium bowl and mix together all your cheeses and the package of taco seasoning. 

Step Three: Once your meat is finished, add it to the cheese mixture. You can fold it in, but don't worry about mixing it completely. You don't want to drown out all the flavors. 


Step Four: Spoon about a cup full of the mixture onto each tortilla and carefully fold by bringing in the sides first, and then rolling. 


Step Five: Do this to all of your burritos until you either run out of mixture, run out of tortillas, or have made enough to serve. (My mixture made 5 chimis)


Step Six: Place in the oven for 15 minutes. Flip them over, and bake an additional 15 minutes. 


Step Seven: Serve warm with your favorite sides and toppings! We had Spanish rice, cheese, and sour cream! Enjoy!



I thought this one was exceptionally great, especially for a first attempt. I'm definitely going to add the bell peppers next time, just to add some variety. Being a vegetarian, just the meaty mixture doesn't do a lot for me, but Chris really enjoyed it! 

Not to say that I didn't enjoy it, I did, but I think a bell pepper and maybe even a small chopped tomato would have made this a hit! There's always next time! 

As a note, we had one of these left over, so I boxed it up and put it in the fridge, but I wasn't sure it would be good reheated because crunchy things turned soggy by the microwave is generally a bad time. However, I reheated it for lunch along with the remaining rice, and it was still crunchy and tasty! Not bad for reheated food at all. 

Next, for dessert we had baked S'mores! But that's another post for another time! ;)
