Bubble Pizza

Category:

So I've seen this floating around Pinterest for a while now, and I was really excited to try this one out. It looks... unique. Biscuits for pizza? Come on!

But it's actually really great! You have to give this one a try! Just substitute it for Homemade Pizza night, and try something a little different. It was surprisingly simple, and really just, delicious. My husband had two huge slices for dinner and took it to work the next day as well (it holds up when reheated!).

So here's what you'll need:

  • 2 cans of flaky buttermilk biscuits
  • 1 jar of pizza sauce
  • 4oz (half a bag) of Mozzarella cheese, shredded
  • Your favorite pizza toppings (I used pepperoni on one side and bell pepper and tomato on the other)
  • Optional: 1 tablespoon Italian seasoning

Step one: Preheat oven to 375. Take your biscuits out of the cans.

Step two: We need to mix the pizza sauce and the biscuits. I've found the easiest way to do this is to find a bowl with a tight lid and place biscuits and sauce inside, and shake it up. It mixes evenly (and is fun to do, honestly).

Step three: Once you've mixed your sauce and biscuits, place them in a greased baking pan (9x13). Sprinkle the Italian seasoning on top.

Step four: The recipe calls for you to put your toppings on now. I couldn't do that however because I put real meat (pepperoni) on my husband's side and didn't want to get it mixed up. I believe it would taste fine either way you would like to do it. I've seen recipes on Pinterest that do this both ways. Toppings in between sauce and cheese, or toppings on top of cheese. I think the choice is up to you. Either way, either add your toppings (or wait), and spread your cheese evenly on top!

Step five: Here's where I put my toppings. Chicago is disappointed in me :(

Step six: Bake for 30 minutes. If you like your cheese mostly not-burnt/brown, I suggest covering the dish with foil for the first 20 minutes and removing the foil for the last 10.

Did not cover with foil - this is the result. Still absolutely delicious!

Serve hot/warm, and enjoy!

It's not very often that I get to say something was "fun" to make, but this was! Something about being untraditional with such a debated meal (here in Chicago, anyway) makes me feel like a rebel. It was a real treat to make and to eat.
