Black Bean Tacos

STOP whatever it is you are doing and make these delicious tacos! Seriously, the best home meal I've had in a long time. Quite the pleasant surprise! Who knew I could make crunchy tacos!?! It was much simpler than I imagined.

And they were absolutely scrumptious. Like, seriously, vegetarian or not, you need to have these, now.

Ingredients:

  • 1 can of black beans 
  • 1 finely chopped red onion
  • 2 Tblspn Cilantro, chopped
  • 1 Tblspn Cumin
  • 1 Tblspn Paprika 
  • Salt to taste
  • 4oz of grated pepper jack cheese
  • Olive oil to grease your pan
  • Corn tortillas
  • Optional: Salsa, Hot Sauce, Sour Cream, Sliced Avacado (to serve with)

Step One: Chop up your red onion. You'll only need about half of it, unless you really love red onions. It really adds to the flavor, but I really think 1/2 is enough. 


Step Two: Mix together your black beans, onion, cilantro, paprika, cumin, and salt in a medium bowl. 

Again, we love butter bowls around here. They're just so handy. Also, I know some people strongly dislike cilantro. My husband and I both dislike it, so I didn't use it. To us, it has a dish soapy taste. On the other hand, some people LOVE cilantro. Use none, little, or a lot according to your taste. 



Step Three: Time to grate your pepper jack cheese. They come in 8oz blocks most often. I used a knife to cut the block in half, put one half back in the fridge and grated the other half. 


Step Four: Use your olive oil to grease your pan. Turn on heat (medium).  

I actually used too much oil, you don't need as much pictured here. I feared that the tortillas would stick, but this was not at all a problem. So much oil made them a little greasy, and I'll definitely use less next time. Yes, I know my pan looks awful. I've had it since my sophomore year of college and it's a nice large pan to work with in situations like this where I need a lot of room. 


Step Five: Add as many tortillas as your pan will comfortably allow. 

My pan holds three (pictured with two), but yours may hold less or more. 


Step Six: Spoon on your bean mixture and then sprinkle some cheese on top of that. Allow it to set for a few seconds before carefully flipping over one side. You may have to gently press down and rest your spatula on it for a second or two so it will stay. 


Step Seven: Allow them to cook for about 3 minutes on each side. Don't worry about the tortillas, unless you forget completely about them, they will not burn. 


Step Eight: Serve with your favorite taco toppings and enjoy! 



I really cannot praise these enough. They were extremely delicious. I ended up making too much bean mix and having left over cheese. I'll definitely be making these for lunch tomorrow while the husband's at work. :)
