Banana Pudding Poke Cake

This recipe seems to be the latest craze on Pinterest, only, I haven't been able to find legit directions anywhere. The only thing I've managed to track down is this long photo (that's pretty self-explanatory, I guess), and a list of ingredients.

Anyway, it looks pretty yummy so we decided to try it.

And FINALLY, I did keep my promise and broke out the "good" camera!

Here's what you'll need:

  • Yellow Box Cake
  • Ingredients to make box cake, usually 3 eggs, 1/4 cup oil, and 1 cup water
  • Two boxes of Banana Pudding
  • 5 cups of milk for banana pudding
  • 1 Bowl of Whipped Cream
  • 1 Box of Vanilla Wafers

Step One: Grease your pan and preheat your oven to temperature as specified on your yellow cake box. Prepare mix as specified on box. 

Lesson Learned: Don't put eggs on top shelf. I had to put them in the microwave to defrost them. 


Step Two: Pour mix in greased pan and bake for time recommended on box.



Step Three: While you're waiting on cake to bake, prepare your banana puddings using the instructions on the box. Usually it's to add 2.5 cups of milk per box and whisk, set aside for a few minutes until hardened. I found that you don't really need two full boxes for this. I used only one and a half and it was more than enough. You could probably get away with using only one box, even. 



Step Four: Take about half a box of vanilla wafers and put them into a ziploc bag. Seal the bag and begins crumbling the wafers. You don't want to squish them to the point of crumbs, just medium-sized pieces and some crumbs. 


Step Five: When cake is finished, take out of oven and allow it to cool completely. 


Step Six: Once cake has cooled, use the handle end of a wooden spoon, or a straw, to gently poke even holes in the cake. Once you've poked holes throughout the cake, pour your banana pudding on top of the cake evenly, and spread it so that it can reach all the holes. 



Step Seven: Top with the whipped cream. It is slightly tricky to spread without mixing it with the pudding. It worked best if the cream is completely thawed. Top with your wafer pieces and let it chill for about 2 hours. Serve and enjoy!

I have to admit, I'm not a huge banana pudding fan. I was only willing to try this because it looked so moist and scrumptious. Once we did try the cake, I was slightly disappointed. 

If you love banana pudding, then you will like this cake; however, not being a fan myself I thought this cake was mediocre at best. There is nothing at all "wrong" with it, I just don't have the taste for banana pudding right now. You may think I'm crazy, but I swear it would be better with some crushed pineapple in it! Yum! I think I'll have to make and post some punchbowl cake soon! 

The hubby likes it, so that's always good.
